Science has proved to us that the carbohydrates we consume are not totally converted to fat, they are converted to fat readily by the action of insulin. It has also been ascertained that many people who are overweight are suffering from hyperinsulinemia; a phenomenon whereby the body produces excess insulin which leads to a high level of insulin in the body. What then is the science behind all these? When an individual consumes a high-carbohydrate food, insulin production is stimulated by the increase in blood sugar level.
However, insulin is a hormone that controls the blood sugar of the body. Insulin has a side effect, in that it causes fat to be deposited and thereafter stimulates the brain to produce signals of hunger, which will result in the more intake of carbohydrates. This is definitely a vicious cycle. Therefore, if we must control insulin we must restrict the intake of carbohydrates. When we reduce the intake of carbohydrate, the level of insulin decreases which in turn leads to the body fat been burnt up and cholesterol removed from the body. This is carried out by a hormone called Glucagon.
