Rice Krispie Bars

This is a scrumptious snack containing 181 calories. Stir 1/4 cup light brown sugar and 3 tablespoons unsalted butter for 2 minutes in the pan until they melt. Add in the 1/4 teaspoon of ground cinnamon, stir and then add 2 ½ cups of miniature marsh mellows. When it melts with sugar add the rice krispies along with 1/2 cup dried diced apricots and 1/3 cup sliced toasted almonds. Pour into a pan coated with cooking spray and refrigerate for 30 minutes. Invert the pan to release the krispies and slice the slab into 12 bars. Top with ½ cup of white chocolate chips melted in 1-3 teaspoons of canola oil and 2 teaspoons of Grand Marnier.

Fresh Corn Salad

Salads are major components in diet recipes. Fresh corn salad makes a delectable side dish (156 calories). Scrape the corn kernels from 5 ears of sweet corn. Boil water in a pot. Add the corn kernels and boil. Remove immediately thereafter and drain the corn out. Pour cold water over the corn to stall the cooking procedure and drain fully. In a bowl mix the corn kernels with 1/2 cup small-diced red onion, 3 tablespoons cider vinegar, 3 tablespoons extra-virgin olive oil, 1/2 teaspoon sea salt, 1/2 teaspoon ground black pepper to taste. Add 1/2 cup chiffonade fresh basil leaves just before serving.
